Sub in a Tub
Ingredients
Deli meat of choice (turkey, salami, ham, etc.)
Cheese (sliced or cubed)
1–2 cups shredded lettuce (iceberg or romaine)
1 tomato (chopped)
½ onion (sliced)
1 cucumber (sliced)
1–2 pickles (sliced)
Dressing:
2 tbsp olive oil
1 tbsp balsamic vinegar or red wine vinegar
1 tbsp Dijon mustard
1 tsp oregano
½ tsp garlic powder
Salt and pepper to taste
Instructions:
Chop iceberg or romaine lettuce (crunchy lettuce won’t get soggy for meal prep), chop deli meat and cheese into bite-sized pieces, then chop veggies (tomato, onion, cucumber, and pickles), combine lettuce, deli meat, cheese, and veggies in a bowl or meal prep container, pack dressing on the side to prevent sogginess - olive oil, balsamic or red wine vinegar, tbsp of dijon mustard, oregano, salt, pepper, garlic powder
