Erewhon Kale White Bean Salad Dupe
Ingredients
1 bunch kale (washed and chopped)
1 can cannellini beans (drained and rinsed)
1 ripe avocado (cubed)
⅓ cup pumpkin seeds
⅓ cup sunflower seeds
⅓ cup hemp seeds
Dressing:
Juice of 2 lemons
¼ cup olive oil
1–2 tbsp maple syrup
2 tsp dijon mustard
2 cloves garlic (minced)
Salt and pepper to taste
Instructions:
Wash and dry kale then chop finely, leaving out the stems. Place kale in a bowl, drizzle with olive oil and massage well until softened. Drain and rinse cannellini beans, add to the kale, mix in pumpkin seeds, sunflower seeds, and hemp seeds. Cube avocado. For the dressing, whisk together juice of 2 lemons, olive oil, maple syrup, dijon mustard, minced garlic, salt, and pepper. Drizzle dressing over salad and toss to combine.
Great for meal prep, I like pairing with chicken cutlets!
