Quinoa and Chickpea Salad
Ingredients
1 cup uncooked quinoa
1 can chickpeas (drained and rinsed)
1 bell pepper (diced)
1 cucumber (diced)
½ red onion (diced)
¼ cup fresh parsley (chopped)
½ cup feta cheese (crumbled)
Dressing:
2 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
½ tsp salt
½ tsp pepper
½ tsp garlic powder
1 tsp oregano
Instructions:
Cook quinoa according to package instructions, while quinoa is cooking, drain and rinse chickpeas, dice bell pepper, cucumber, and red onion, chop parsley, and crumble feta, in a large bowl, combine cooked quinoa, chickpeas, bell pepper, cucumber, red onion, parsley, and feta, whisk together olive oil, red wine vinegar, lemon juice, salt, pepper, garlic powder, and oregano, drizzle dressing over the salad and toss to combine, store in meal prep containers for up to a week in the fridge.
