Pasta Fagioli
Pasta “fazool”
My favorite comfort meal growing up
Ingredients
1 onion, diced
avocado oil
3 cloves garlic, minced
1 box chicken broth
1 can diced tomatoes
1 jar marinara sauce (plus a jar of water)
Italian seasoning
salt & pepper
dried parsley & oregano
1 cup ditalini pasta
1 can cannellini beans, drained
grated parmesan
fresh parsley
sourdough bread
garlic and herb butter (for toast)
Instructions:
Dice the onion and add it to a pot with avocado oil, cooking until translucent, then add minced garlic and cook until fragrant. Pour in the chicken broth, diced tomatoes, and jar of marinara sauce. Fill the marinara jar with water and add that to the pot as well. Season generously with salt, pepper, Italian seasoning, parsley, and oregano. Bring the mixture to a boil, then add the ditalini pasta and cook for about 10 minutes until al dente. Once the pasta is cooked, remove from heat and stir in the cannellini beans. Add grated parmesan and fresh parsley to taste. Serve with sourdough toast spread with garlic and herb butter for the perfect comfort meal!
