Chicken Noodle Soup
ingredients
1 white onion diced
3 carrots, diced
3 celery stalks, diced
3-4 cloves garlic, minced
2 boxes chicken bone broth
1 rotisserie chicken, shredded
1/2 box ditalini pasta
fresh parsley
salt, pepper, garlic powder
nutritional yeast
2 bay leaves
olive oil
lemon
grated parm
Instructions:
Start by dicing the carrots, celery, and onion. In a large pot, heat a drizzle of olive oil on medium-high heat. Add veggies, season with salt, pepper, and garlic powder. Stir frequently. Add minced garlic and sauté until fragrant. Pour in chicken broth and stir in bay leaves, nutritional yeast, and a squeeze of fresh lemon juice. Bring to a boil. Once boiling, add pasta and cook 10-12 minutes. Stir in shredded chicken and chopped parsley. Remove bay leaves before serving. Top with grated parmesan and enjoy!
