Stuffed Zucchini

 
 

Ingredients

  • 3–4 zucchinis, halved and scooped

  • 1 lb lean ground beef or turkey

  • 1 cup marinara

  • ¼ cup grated parmesan

  • ½ cup shredded mozzarella

  • 2 tbsp nutritional yeast

  • ½ onion + 2 garlic cloves, finely diced

  • olive or avocado oil

  • Italian seasoning, red pepper flakes, salt & pepper

  • fresh basil or parsley


Instructions:

Preheat oven to 400°F, Cut zucchini in half lengthwise and scoop out the centers (save for later), Lightly brush or spray zucchini boats with avocado oil and season with salt, pepper, and Italian seasoning, Place on a baking sheet and bake for 10 minutes, Heat 1 tbsp oil in a skillet over medium heat, Add onion and garlic, sauté for 2-3 minutes, Add ground beef or turkey, breaking it up, Season with salt, pepper, Italian seasoning, and red pepper flakes, Stir in nutritional yeast and saved zucchini insides, Mix in marinara sauce and grated Parm, let simmer for 3-4 minutes, scoop filling into each boat, Top with shredded mozzarella, bake for 10-12 minutes, garnish with fresh basil or parsley

  • Serve with a side salad and/or rice for a balanced meal!
