Taco Bowl

Ingredients
1 cup white or brown rice
1 pound lean ground turkey
2 tbsp taco seasoning (Siete or your preferred brand)
1 can black beans (drained and rinsed)
1 can corn (drained)
2 cups shredded lettuce
½ cup pickled onions
½ cup nonfat plain Greek yogurt
1-2 tbsp hot sauce, optional: cheese, salsa, guacamole, or other toppings of choice
Instructions:
Cook 1 cup of rice according to package instructions, cook ground turkey in a pan over medium heat, season with taco seasoning, add black beans and corn to the pan, stir to combine and cook until heated through, layer rice in bowls or meal prep containers, top with turkey-bean-corn mixture, add shredded lettuce and pickled onions, mix Greek yogurt with hot sauce for a healthier creamy sauce, drizzle sauce over the bowl, optionally add cheese, salsa, guacamole, or other toppings
If you’re meal prepping this recipe, separate the toppings so you can microwave the rice-turkey-beans-corn and add cold toppings after!
