High Protein Buffalo Chicken Salad

Ingredients

  • 1 rotisserie chicken (shredded)

  • ¼ cup buffalo sauce (Frank’s RedHot or Primal Kitchen)

  • ¼ cup nonfat plain Greek yogurt

  • ¼ cup light mayo, 1 celery stalk (diced)

  • 2 medium carrots (diced)

  • ½ red onion (finely diced)

  • 1 tbsp fresh dill (chopped)

  • 2 tbsp green onion (chopped)

  • 1 packet ranch seasoning mix

  • optional: 2 tbsp Grillo’s pickle de gallo or chopped pickles with a splash of pickle juice


Instructions:

Shred rotisserie chicken off the bone and add to a bowl, finely dice carrots, celery, and half of the red onion, mix in Greek yogurt, light mayo, buffalo sauce (to taste), chopped dill, chopped green onion, and ranch seasoning, optionally add Grillo’s pickle de gallo or chopped pickles with a splash of pickle juice if you’re a pickle lover like me,  mix everything together until well combined, portion into meal prep containers, enjoy with crackers and veggies for a complete meal!
