Ground Chicken Teriyaki Bowl

 
 

Ingredients

  • 1/4 cup uncooked white rice

  • 1/4 package ground chicken

  • Kinder’s teriyaki sauce

  • 1/4 avocado

  • 1 mini cucumber

  • 1 carrot, peeled

    • 1 tsp soy sauce

    • minced garlic

    • minced ginger

    • sesame seeds

  • red cabbage

  • shelled edamame

  • optional: sriracha, sesame seeds for on top


Instructions:

For carrot salad, peel one carrot using peeler and add to bowl with soy, garlic, ginger, sesame seeds and let marinate while cooking the rest. Cook rice according to instructions - I use my rice cooker and it’s a 1:2 ratio so 1/4 cup rice to 1/3 cup water. Heat pan to medium high heat with avocado oil spray and cook ground chicken fully through before adding in teriyaki sauce. Plate with topping of your choice and option to add sesame seeds and sriracha on top!
