Fall Sheet Pan
Ingredients
2 sweet potatoes, peeled & cubed
2 lbs brussel sprouts, trimmed & halved
1 red onion
2 packages chicken sausage with kale
olive oil, salt, pepper, garlic powder, paprika
1/2 cup crumbled feta
Lighter Maple Dijon Dressing:
6 tbsp dijon mustard
2 tbsp maple syrup
2 tbsp apple cider vinegar
3 tbsp olive oil
salt & pepper to taste
Instructions:
Preheat oven to 400°F, toss chopped veggies with olive oil + seasonings, spread veggies on one pan and sausages on another. If sausage is raw, cook separate and slice after but if it is precooked feel free to slice it and add to same pan before baking. Roast 30-35 mins, flipping halfway through. Top with a sprinkle of feta and maple dijon dressing. Makes 5 servings - I made for dinner on a Monday and meal prepped for lunches the rest of the week.
