Chicken Lettuce Wraps

 
 

Ingredients

  • 1 lb ground chicken

  • ½ white onion, chopped

  • 4–5 green onions (white and green parts separated)

  • 2–3 garlic cloves, minced

  • 1 cup shredded carrots

  • 1 cup snap peas, sliced

  • ½ cup baby corn, chopped

  • ½ cup water chestnuts, chopped

  • iceberg or butter lettuce

  • sesame seeds, for garnish

  1. Sauce:

    • ¼ cup soy sauce

    • ¼ cup sriracha

    • 2 tbsp hoisin

    • 1 tbsp sesame oil

    • 1 tsp honey

    • 1 tbsp white pepper


Instructions:

Chop the green onions (separating hard white and soft green parts), heat olive oil in a large pan over medium heat, add the white onion, hard green onion parts, and garlic, sauté until fragrant, add the ground chicken and cook until browned, toss in the shredded carrots, snap peas, baby corn, and water chestnuts, cook for a few more minutes until veggies soften, in a small bowl, whisk together soy sauce, sriracha, sesame oil, hoisin sauce, honey, and white pepper, pour the sauce into the pan and let simmer until the sauce thickens, scoop the mixture into iceberg lettuce leaves, garnish with sesame seeds and the remaining green onions.
