Buffalo Chickpea Lettuce Wraps

 
 

My first viral recipe!

Ingredients

  • 1 can chickpeas (drained and rinsed)

  • 2 tbsp buffalo sauce (or enough to coat the chickpeas)

  • ¼ cup nonfat plain greek yogurt

  • ½ tsp ranch seasoning

  • 3-4 lettuce leaves (romaine or butter lettuce)

  • optional: pickled onions


Instructions:

Preheat oven to 400°F (or set air fryer to 400°F). Drain and rinse can of chickpeas, place them in a bowl and toss with buffalo sauce until evenly coated, spread chickpeas on a baking sheet lined with foil, bake or air fry for 15-20 minutes until crispy. While chickpeas are crisping, mix greek yogurt with ranch seasoning to create a healthy, high-protein ranch. Once chickpeas are done, scoop them into lettuce leaves, drizzle with ranch dressing, and optionally add pickled onions on top.
