Brooke’s Steak Salad
Ingredients
1 cup romaine lettuce
1/4 cup corn
¼ cup black beans
2 tbsp roasted red peppers
2 tbsp pickled onions
a few pickled jalapeños
2 tbsp goat cheese
6–8 oz filet mignon
Dressing:
2 tbsp olive oil
2 tbsp lime juice
1 tbsp green pepper hot sauce
For steak:
olive oil
Kinder’s steak blend seasoning
1 tbsp butter
1 garlic clove (smashed)
Instructions:
Wash and chop lettuce and add to your bowl. Drain and rinse canned corn and black beans. Top lettuce with a spoonful of corn, black beans, roasted red peppers, pickled onions, and sliced pickled jalapeños. For the dressing, whisk together equal parts olive oil and lime juice, then add green hot sauce to taste. Cook steak using my “The Perfect Steak” recipe. Slice the steak and add it on top of the salad, drizzle with dressing, and sprinkle with crumbled goat cheese.
