Salmon or Shrimp Tacos with Mango Salsa

 
 

I make this recipe with both salmon or shrimp

Ingredients

  • 4–6 oz salmon or shrimp

  • 1 mango, diced

  • ½ red onion, diced

  • 1 cup cherry tomatoes, diced

  • ¼ cup cilantro, chopped

  • juice of 1 lime

  • 1–2 tbsp honey

  • 2 Siete or low-carb wraps

  • microgreens

  • 1 tbsp olive oil

  • chili powder, garlic powder, cayenne or taco seasoning

  • salt, pepper, hot sauce (optional)


Instructions:

Peel and devein shrimp (or cube salmon and remove skin), coat with olive oil, season with chili powder, garlic powder, cayenne (or taco seasoning), salt, and pepper, pan-fry salmon or shrimp over medium heat until cooked through, while protein is cooking, dice mango, red onion, cherry tomatoes, and chop cilantro, combine in a bowl with lime juice, a drizzle of honey, and a pinch of salt to make the mango salsa, assemble tacos by placing the cooked protein into wraps, top with mango salsa, add microgreens, and drizzle with hot sauce

  • You can also make this recipe over rice instead of in a wrap!
